
Our Values
Our name Gimjang (also spelled Kimjang), as an UNESCO Intangible Cultural Heritage, means a traditional practice of collective kimchi making from Korea. For us, it symbolizes a spirit of sustainability since the preparation of kimchi ingredients is spectacularly in harmony with nature, its making and sharing process is fundamentally communal to build a bond with neighbours, and most importantly its bountiful lactic acid bacteria sustains human's healthy life.

A greater portion of Napa Cabbages and Daikon Radishes consumed in BC Canada are being imported from out of our borders. Many grocery stores selling kimchi display either the products that have traveled thousands of miles or the purported local ones made from the ingredients that have traveled the same distance.

Imported Napa Cabbage are one of the crops that is heavily sprayed with pesticides due to its susceptibility to pests.

We acknowledge, given the current limitations of local produce supply, that we cannot source every ingredients locally either. However, our ultimate goal is to localize every ingredient in the future. Please support us.

We are defining a unique Vancouver style kimchi characterized by simple, healthy, natural flavour preserving Korean traditional tang and delicate umami as well. ​​

All portfolio of our kimchi is vegan. The reason why we do not use shrimp seasoning or fish sauces is not only because we are supporting vegan foods, but also because we found we cannot source fresh ones locally; most imported ones are laden with preservatives.
